Compared to broader, more rustic Mercurey styles, Clos L’Évêque is finer, more perfumed, and more linear, thanks to its high‑lying, chalk‑dominant soils. On the palate, it is silky, bright, and elegantly structured, showing flavors of red berries, cherry skin, subtle earth, and spice, supported by fine, persistent tannins and a fresh, mineral backbone. The gentle extraction (pigeage only) keeps the wine pure and refined.
