De Salis Wild Chardonnay

Handpicked in small parcels over 2 weeks, each bin was whole bunch pressed. The juice was settled for 24 hours before fermentation with fine pulp in 16% new and older French barriques. After full secondary fermentation and a year in barrel the Wild Chardonnay was selected from barrels showcasing the winemakers desire and ability from this vintage to produce a second Chardonnay. The Wild Chardonnay is showing a nose apricot, yuzu, lanolin, butterscotch, macadamia and fennel seed a pallet of grapefruit, white peach, cultured butter, manuka honey, Unfiltered & Unfined.

Drinks well now and cellaring 8-10 years.
