A textural Sauvignon Blanc with punchy aromatics, sweet pea and pear with lemon and green apple on the palate and fresh minerality to finish. At vintage all parcels are pressed into tank and cold fermented cool to preserve aromatics and freshness. Small batches are kept separate to see how the vintage and vineyard sites express themselves. The best parcels of wine are then blended and bottled for release in winter each year.
