Evenfall Cabernet Sauvignon

Evenfall Cabernet Sauvignon is estate grown at our home in the West Tamar Valley. It was hand picked and destemmed to open top stainless steel vessels for fermentation. Hand plunged and pumped over as required during ferment, followed by gentle pressing off skins to tank for malolactic fermentation, with careful maturation in oak for 14 months to follow.
