    Prime Chardonnay fruit from our original 1980 plantings were handpicked fully ripened, followed by 100% barrel fermentation in French oak barriques (approximately 20% new barrels). A 25% component of the juice is allowed to ferment with its solids, giving a subtle “old world” character of marzipan. During the 10 month barrel maturation period, regular battonage is carried out to enhance the creamy texture of the wine. Mouth-watering acidity carries the flavours, subtle oak and creamy textures to a satisfyingly long finish. It is beautifully restrained and partners a wide variety of medium-flavoured fine food. Careful cellaring over 15 years will reward handsomely.
