Texture is silky, lightly creamy, and subtly pithy, showing the influence of natural ferment complexity without losing Hunter purity. The mid‑palate reveals grapefruit, lemongrass, soft herb, struck‑match nuance, and cool wet‑stone minerality, adding savoury depth and quiet funk beneath the citrus. The finish is dry, long, and finely mineral, leaving citrus peel, saline, and chalk‑rock echoes with refreshing persistence.
