    In honour of Jo Irvine’s wine making roots & her Father Jim Irvine, her passion for this humble variety has seen her create the ‘Cavall’ Merlot - a true testament to a wine style that is sometimes overlooked, and always delightfully re-discovered in our Mosaic Collection. King Arthur’s dog Cavall was said to have left his paw-print in a stone while he and Arthur were hunting the great Boar in Wales. Arthur honoured his canine friend by erecting a monument and placing the paw print stone on top. People would come and take the stone as a souvenir but the next day it would return to its rightful position, just as a dog will always return to its master. Grapes were harvested from 50-year-old vines on unique sandy loam low fertile soil in the central Barossa floor region. The resulting wine is full-bodied and shows rich and fragrant aromatics with intense red berry fruit, plums, and cloves. Aged for 3 years in 50% New French oak combined with a subtle tannin structure gives this wine the elegance it deserves. A vegan-friendly wine, rewarding in flavour and complexity.
