The mousse is delicate yet energetic, giving the wine lift while allowing the 100% Pinot Noir fruit to show its purity and drive. After the initial brightness, the mid‑palate deepens into lively berry tang and subtle spice, shaped by the wine’s 44 months on lees, which add a gentle creaminess and refined texture without muting the fruit.
