Fresh acidity gives lift, while fine, slightly grippy tannins add a more earth‑mineral firmness than the plusher Atrius bottling. Hints of black pepper, graphite, and subtle dried herbs bring Hilltops spice and savouriness. The finish is dry, long, and quietly powerful, leaving dark fruit, pepper, and a faint earthy echo.
