Phillip Shaw No.8 Pinot Noir
Despite the challenges of a cool, wet spring and mild autumn, careful vineyard management helped produce a complex, elegant Pinot Noir with vibrant acidity. The long ripening process added depth and character.
Hand harvested, Fermented in open vats by indigenous yeast, 25% whole bunch to develop interest and texture, 20% aged in new French barriques, Wild malolactic fermentation,12 months maturation on fine lees completed in barriques
This version of No8 presents aromas of raspberries, wild strawberries, hints of earthy, forest floor and dark cherry. Red fruits and violet dominate the flavours with layers of complex savoury herbs, and structured tannins create a refreshing finish.
