The Savagnin has the usual scents of saline air, pistachio and ginger. The palate has a definitive savoury edge to it, with some hints of lime pith and some spice. There is also some grip on the palate from the grapes being soaked in their juice for three days before fermentation. The acidity is well balanced, and it drives the long finish. – Joe Holyman
