Certified organic, 90% whole bunch, aged in 2800L foudres. The whole-bunch percentage is obviously high, but the fruit has taken it up beautifully; there’s nothing hard, green or jangly here. This is awash with sweet, juicy, red-berried fruit, the complements coming in the form of roasted nut, smoked wood and game characters. In short, it puts on quite a show.
